Jacob, our gracious host, introduced us to a stunningly intricate white tea, along with a selection of other remarkable teas from their family-owned tea farm. His mother personally ventured into the fields to delicately hand-pluck these tea leaves. Moved by her dedication, the family unanimously decided that all proceeds from this special tea would support Mrs. Bai, Jacob's mother. Hand-plucking tea leaves demands immense labor, time, and skill. The leaves in this white tea are exceptionally whole and beautiful, a testament to the meticulous care they received.
Story
The Bai Family has a longstanding history in the art of tea, spanning five generations. The youngest generation today, was initially discouraged from entering the family's tea trade. Instead Jacob and his brother Sun pursued their education while fostering a love for surfing in Yilan, Taiwan. However, as their parents' health declined, their family’s legacy became front of mind and stirred something within them. Conversations with close friends led to a pivotal decision: to return to their home and embrace the tea heritage of their family.
Yet their journey wasn't just about preserving tradition; it was about blending it with modern cultivation practices. With their father as their guide, Jacob and Sun sought to infuse traditional techniques with contemporary science, creating teas that were not only steeped in history but also crafted with precision.

Steep in glass or ceramic teapot or gaiwan
White Peony Brewing Instructions:
Infuse 2.5g or 3g of loose leaf tea in 6oz-8oz of water at 185°F-190°F for 1 minute (infuse multiple times). Rinse the tea leaves for 5 seconds with the hot water before the first infusion.
