Description
The Premier tea is made with the Ruby 18 cultivar and it is processed with the traditional craft methods of an oolong. This is a tea with lightly twisted leaves, highly oxidized, half-moon rolling, and lightly baked. Its rich, malty, sweet, fruity, fragrant aroma, and beautiful red color make it one of the premier oolong teas of Taiwan.
Background Story
In 1925 Burmese Assam varietal bushes were introduced and planted in the Sun Moon Lake (Ri Yue Tan) area. Due to Sun Moon Lake’s ideal terroir the Assamica tea trees grew very well. In 1999 after several years of searching for an ideal cultivar for a new tea the Taiwanese Tea Research Extension Station released Ruby 18 (Hongyu 18), which is a hybrid of the Taiwanese indigenous tea bushes and the Assamica tea bushes imported by the Japanese.
Brewing Instructions
Ideal Infusion: 3g (about 1 tbsp) of tea, 8oz of water, 195°F, for 3 minutes or 3g of tea, 6oz of water 195°F, for 2 minutes. You may do multiple infusions to your taste.
Chilled Infusion: Use the ideal infusion to brew the tea multiple times, to your taste. Let the tea cool down and then put it in a glass jar with a lid in the fridge. Enjoy after a couple of hours.
Cold Brew: 3g (about 1tbsp) of tea in a 12oz of cold water in a jar with a lid, place it in the fridge for 12 hours, and enjoy.
